Downsizing Me Log - 11/1/2015 - 1 week on KETO - plus a recipe!!!



Weight - 213 (down 7 pounds in the first week of KETO!!!)

  • Breakfast - Eggs with Bacon and Cauliflower Hash (recipe below)
  • Lunch - Avocado Tuna Salad with olives and tomatos
  • Dinner - Pork cutlets with mushroom sauce and green beans
  • Other/Snacks - Fat bomb and monterey jack cheese

Water Intake - 100oz

Blood Sugar Readings - forgot to take it this morning, stupid, since I really wanted to see if my meter is broken!

Now, for the yummy recipe!!!

Bacon and Cauliflower Hash - adapted from Paleo Leap

Bacon and Cauliflower Hash


12oz of cauliflower chopped small
4 slices of bacon, chopped
1/2 medium onion chopped
1/2tsp smoked paprika
garlic clove minced
juice from 1/2 lemon

Cook the bacon in a skillet over a medium-high heat until crispy.
Remove the bacon from the skillet and set aside, but leave the bacon fat in the skillet.
In the skillet, add the cauliflower, garlic, and onion to the bacon fat. Cook 2 to 3 minutes or until it starts to golden.
Add the smoked paprika and season to taste with salt and pepper.
Add a couple tablespoons of water. Cover the skillet and cook until the cauliflower is tender, about 5 minutes.
Return the bacon to the skillet.
Add the lemon juice and cook for another 2 minutes; then remove from the heat.
Serve with fried eggs, or as a side for any meal.

  1. 7Lbs in a week! Well done, that's incredible. I'm attempting to stick to low carbs this week. Hoping it'll go as well for me, as I'm 8lbs from goal.
