Downsizing Me Log - 10/30/2015 - with breakfast frittata recipe

  • Dinner - Salmon with baby squashies pan fried in butter

So for breakfast we had a Jalapeno Bacon Frittata, it was yummy... so I thought I would share the recipe.

Jalapeno Bacon Frittata

Jalapeno Bacon Frittata


4 slices bacon
1/4 cup green onion
1/4 cup bell peppers
1/4 cup celery
1 jalapeno
1/8 cup heavy cream
4 eggs
2 oz cheddar cheese

Cook bacon in a skillet until crisp, set aside
In the bacon fat cook the bell pepper and celery with the green onions and jalapeno. Chop up the bacon and add back to skillet.
Combine eggs and heavy cream and whisk together, add cheese and mix then pour over bacon and veggies.
Cook until eggs are set.

I think I have mentioned this before, when Nutrisystem is done, I am going to eat low carb. I am diabetic and would love to get off the medication that I take for this. I have done alot of research and a low carb diet is my best bet. After looking at different options for a low carb diet, I have decided to try a Ketogenic Diet (Keto).

So I have decided to take a little break from the Downsizing Me Log, not the downsizing part, just the log part. I am still eating Nutrisystem but planning the next phase...Keto/Low Carb. Not sure when that will start, but trying to research, plan and get ready... Will keep the blog updated if I do really well one day (or not so well)...

I SCREWED UP - RANT

What the hell was I thinking...

I joined a DietBet last month. It ends on 10/11/2015. I only had to go a month without eating crap food and maybe exercising a little. But could I do that, NO! No I could not... I have hardly exercised, I ate all kinds of crap food in the last few days, and now, I weigh more than I did before the bet started...

I am SO mad at myself.

I feel so guilty, and stupid...
