NUT BUTTER LOAF - SO YUMMY!!!

Everyone I follow on Instagram has been raving about this for weeks now, so I thought I would try it. The recipe is adapted from @ally_lchf_trainer

First, the ingredients...
  • 6 eggs
  • 1/2 cup peanut butter (or any nut butter you would like)
  • 1/4 cup chopped pecans (or any nuts or seeds that you want to use)
  • 1 1/2 tablespoon of ground psyllium husks
  • salt
  • pepper
Now, the procedure...

Crack the eggs into your mixing bowl.



Then add the peanut butter and the pecans.


Then add the psyllium husk and the salt and pepper.


Mix until well blended. I used a stand mixer, you can also use a hand mixer. Once it is mixed well, pour into a greased loaf pan (It can also be lined, I forgot that part).


Bake at 375 degrees for 40 - 50 minutes.


Once it is cooled, place on cooling rack to cool the rest of the way. Don't try to cut it yet!! It may fall apart.


The finished product. I can't wait to toast it and slather it with butter!!!

  • Lunch - Jimmy Johns Country Club Unwich and a Pickle
  • Dinner - Salmon with baby squashies pan fried in butter
  • Other/Snacks - fat bomb
Macros -
  • Fat - 67%
  • Protein - 28%
  • Net Carb - 5%
Water Intake - 60oz (way too low!!!!!)

Blood Sugar Readings -
  • Morning Fasting Blood Sugar - 92
So for breakfast we had a Jalapeno Bacon Frittata, it was yummy... so I thought I would share the recipe.

Jalapeno Bacon Frittata

Jalapeno Bacon Frittata


4 slices bacon
1/4 cup green onion
1/4 cup bell peppers
1/4 cup celery
1 jalapeno
1/8 cup heavy cream
4 eggs
2 oz cheddar cheese

Cook bacon in a skillet until crisp, set aside
In the bacon fat cook the bell pepper and celery with the green onions and jalapeno. Chop up the bacon and add back to skillet.
Combine eggs and heavy cream and whisk together, add cheese and mix then pour over bacon and veggies.
Cook until eggs are set.

1 serving Protein Powder

1 tbs Chia Seeds

2 tbs cacao powder

2 tbs PB2 (Powdered Peanut Butter)

medium banana

1 cup almond milk, unsweetened

15 almonds

1 serving protein powder

1 oz avocado

½ cup cherries (about 12)

1 medjool date

¼ cup of oats

1tbs chia seeds

1 cup almond milk, unsweetened
