What I Ate This Week -
  • Wednesday - Started the day well, had a Nutrisystem Canadian Bacon Sandwich with laughing cow cheese, a banana and coffee for breakfast. No morning snack because I didn't make it last night due to stressing out. Lunch was Nutrisystem White Mac and Cheese with ham and brocolli and a laughing cow cheese mixed in. That's where it went downhill. My meeting this afternoon had chocolate and caramel corn and chocolate and did I mention CHOCOLATE!! Then we ordered pizza for dinner. I think it was stress relief. Tomorrow is a new day, oh, its TOM too!
  • Thursday - Breakfast was Nutrisystem Chocolate Biscotti Bites with a banana and coffee, morning snack was PB&J Overnight Oats; Lunch was a Nutrisystem Chicken Sandwich with laughing cow cheese and veggies; afternoon snack was a couple clementines and some nuts; Dinner was Nutrisystem Penne Bolognese with cottage cheese and salad and some pumpkin seeds; dessert was Nutrisystem Ice Cream Sundae. 
  • Friday - Breakfast was Nutrisystem Canadian Bacon Sandwich with laughing cow cheese and coffee; morning snack was Mocha Overnight Oats (Chocolate Coffee, wasn't my favorite) and some roasted pumpkin seeds (they're gone, thank goodness!!); Lunch was a Nutrisystem hamburger with pickles and cheese with some carrots; afternoon snack was jerky fruit pack; Dinner was Nutrisystem Cheese and Broccoli stuffed chicken breast with brussels sprouts, bread and cottage cheese; dessert was Nutrisystem Vanilla Shortbread Cookies and Mint Cocoa.
  • Saturday - Breakfast is a Nutrisystem Strawberry Crepe with cheese and whipped cream and coffee; morning snack was Nutrisystem Pizza Snack-a-rounds (we went to the movie); Lunch was Nutrisystem Pepperoni Pizza Melt; Dinner was NOT ON PLAN (WTF) we had mexican food, a steak quesadilla and rice and beans, THEN had chocolate covered strawberries...  
  • Sunday - Back on track... Breakfast was Nutrisystem Chocolate Biscotti Bites with coffee; lunch was Nutrisystem Grilled Chicken Sandwich with cheese and a little bit of BBQ sauce and veggies; afternoon snack was a banana; Dinner was Nutrisystem Chicken Fettuccine Alfredo and squash with parmesan and cottage; dessert was Nutrisystem Chocolate Cupcake
  • Monday - Breakfast was Nutrisystem Canadian Bacon Breakfast Sandwich with laughing cow cheese and coffee, morning snack was Chunky Monkey Overnight Oats, recipe below; Lunch was Nutrisystem Steak and cheese melt with some chicken and a sliced tomato; afternoon snack was half a pear and some more chicken; Dinner was Nutrisystem Chicken Parmesan and brussels sprouts with parmesan cheese; dessert was Nutrisystem Chocolate Peanut Butter
  • Wednesday - Breakfast was Nutrisystem Baked Blueberry Oatmeal with extra blueberries, hemp seeds and nuts with coffee; morning snack was 1/2 a greek yogurt and homemade granola (really don't like fruit yogurt); Lunch was Nutrisystem 3 cheese chicken with extra chicken, broccoli and a laughing cow cheese with extra veggies; oh, did I mention the three pieces of chocolate that I had while at work?? Dinner was Nutrisystem Chicken Bacon Ranch Pizza with veggies; dessert was Nutrisystem Tiramisu with banana and whipped cream.


Eating On Track This Week - no, not really...

Comments - The election really stressed me out. I am scared for America. But, on the other hand, he has been elected President and I will respect and support that.

So, after about 2 weeks of owning it, I have lost my Misfit Flash Link... I knew it was only a matter of time as it just clips to waistband. But, sadness anyway. Guess I have to go back to my FitBit Charge HR... at least the Misfit Flash Link was only $15.

Overnight Oats have become an obsession, I am always on the lookout for a new recipe. The Mocha ones I made were not the best, may just need to have a tweak or two. But the PB&J ones are my fave, and the new one (see below) is a close second... really need to try the Carrot Cake ones, and the Apple Cinnamon ones, and the Pumpkin Pie ones, and the... you get the point!!

RECIPE...



Chunky Monkey Overnight Oats...
(adapted from She Well)

1/3 cup oats (not instant)
1 tbsp chia seeds
1 tbsp hemp seeds
1 tbsp peanut butter powder
1/2 cup almond milk
couple of drops liquid stevia
1/2 banana, diced
mini chocolate chips

Place the oats in a jar, add the chia and hemp seeds and peanut butter powder. Shake to combine. Pour the almond milk in the jar and add a couple of drops of liquid stevia (I use the Vanilla Creme flavored Sweet Leaf). Place banana and chocolate chips on top. Cover and place in the refrigerator overnight or for at least a couple of hours. Stir and enjoy, yum!!!!
